Pruning happens plant by plant and is done completely by hand using pruning shears and a small hand saw. The goal is to regulate the coming year′s production (fruit crop) and to renew the productive elements of the vines.

Pruning takes place in winter, after all the leaves have fallen from the plants during their dormant stage.

At Adalgisa, our pruning techniques are very traditional, known as single or double Guyot. Each vine consists of a vegetative cane, or fruiting cane, which has five- to six-node spurs and the coming year′s fruiting cane is pruned back to two spurs.
