Harvest & Destemmer

Grapes are harvested by hand and placed them into boxes of 35 pounds to avoid damaging the grapes. The harvest takes place during the morning to take advantage of the coolest temperatures of the day and after two days we finish the picking.

The grapes are harvested once they reach a certain level of maturation, this being once the grapes are between 23 and 24 degrees Brix and upon relative maturation in the seeds and the skins.

First the grapes are hand sorted on a conveyor belt, the clusters are checked for defects or damaged areas, and any leaves and other undesired objects are taken out. Then the clusters are put through the destemmer which separates the individual grapes from the stem.
