Clarification & Bottling

Once the wine has aged 24 months blends are made and we then put them all together in a larger tank for clarification.

In this process we add egg whites (albumen) to the wine to help settle out any unwanted elements that are suspended in the wine.

A mobile bottling line is hired and comes to the winery to bottle. They follow careful procedures and complete various inspections before the wine is bottled. For a period of 15 days the wine stays in a vertical position to allow the cork to expand to it's full potential, then the wine is stored horizontally for at least one year until it is sold.
